The lieu-dit Les Deponcins is located close to Chateau Grillet, is made in very small volumes and is aged in 40% new oak, with lees stirring to add extra opulence. The DePoncins is Villard's top cuvee which typically has 10-15% botrytis on the fruit. This gives the wine roundness, richness and a waxy mouth feel. It also sees a little bit of new French oak. Formerly a chef, Francois brings his complex palate to the winery to produce wines of power and grace that can age for years.
