Gaby Sadan studied and trained winemaking in France before returning to his native Israel to grow quality wines. He originally began the now famous Galil Mountain winery. He is Israel's first all-natural producer. Hand-harvesting everything, non-chemicals and using indigenous yeast grown in the vineyards. This wine Chenin blanc is fermented whole cluster in 400 liter french oak barrels and aged for one year on its lees. The soils are limestone and volcano and produce a wine of depth and complexity.
